Parchment Paper

 

Parchment Paper, also known as baking paper, is used to provide a safe, heat-resistant, non-sticky surface for baking items. It is used instead of greased pans, and as they are easier to use and dispose of, parchment paper often results in faster turnover of baked goodies. They should not be confused with the more common butter paper or wax paper, which is combustible in an oven, and can affect the taste of the baked goods.

What is Parchment Paper made of?

It is made of the same material regular paper is made of, just in a different way. Modern parchment paper is made by running sheets of paper pulp through a bath of sulfuric acid (a method similar to how tracing paper is made) or sometimes zinc chloride. This process partially dissolves or gelatinizes the paper. This treatment forms a sulfurized cross-linked material with high density, stability, and heat resistance, and low surface energy – thereby imparting good non-stick or release properties. The treated paper has an appearance similar to that of traditional parchment. Parchment paper is safe to use to temperatures up to 420-450 degrees Fahrenheit (exact temperature depends on the brand) and is best used in a regular or convection oven, not under a broiler. At higher temperatures, the paper will become brittle and will start to turn dark brown.

Why use Parchment Paper?

Baking often results in the product sticking to the baking tray, or the baking utensil, and thus, releasing the product can become quite a problem. The cookie may break, or the cake may tear off, with no bottom. To avoid these sticky situations, traditionally, baking trays and utensils were greased with either oil or butter for safe and easy release of the baked product. However, this is a time consuming process, especially in a factory which has trays holding hundreds and hundreds of cookies at once. An easy, disposable, and safe alternate for this is parchment paper, which is just placed on top of the tray/utensil before pouring the batter.
